Roasted Tomato Soup
I’ve made tomato soup many times before; it’s my favorite thing to do when we get too many tomatoes ripe at the same time! This is the first time I roasted the tomatoes instead of blanching them though, and what a difference! I’m never blanching a tomato again!

I have made this soup twice now. And it has been amazingly delicious both times. I did not make it exactly the same each time though. The first time, I roasted the tomatoes in the oven. Over a month has past since then, and my oven still smells like tomatoes every time I open it. The olive oil and tomato juice spattered all over the inside of the oven the whole time the tomatoes were roasting.
The second time, I decided to try roasting the tomatoes on the Blackstone griddle. I definitely liked this method better! I could watch the tomatoes while they roasted, flip them when I wanted to, and the clean up was pretty easy! (Unlike the oven…which I’m still hoping will clean itself.)
Another change I made from the first batch to the second was in the chicken broth. I happened to have some homemade chicken broth in the freezer that I used the first time. The second time, I had to buy chicken stock. The taste difference was probably negligible since the tomatoes are the dominant taste, but I do always prefer homemade over store bought when possible.
The most brilliant idea I had the first time I made the soup, was in the method of storage. Usually I just keep the soup in the pot I cooked it in. But that takes up a lot of space in the fridge, and it means dirtying a ladle every time I want soup, which means more dishes. (And who wants more dishes?!) This time, it occurred to me that I could keep the soup in a pitcher, and then just pour some into a bowl when I want to eat some. Genius! This wouldn’t work well for a chunky soup obviously, but it’s perfect for a liquid soup.
