Meal Prep Monday : Pasta with Meat Sauce & Veggies

We just got home from a week at Disney and Universal and definitely didn’t want to spend any more time than we had to getting the meal prep done for this week. So we made the quickest meal I could think of!

Pasta with meat sauce and veggies

Ingredients

1.5 lbs rotini • 45 oz marinara sauce • 16 oz alfredo sauce • 1.2 sweet onion

12 oz frozen peas • 12 oz frozen cauliflower • 3 cloves garlic • 2 lbs ground beef

1) Boil water in a large pot. When it comes to a boil, add a generous amount of salt and the pasta. Cook according to the directions on the box.

2) Chop the onion and garlic. Add the onion to a very large pot with some olive oil and cook til translucent. Add the frozen cauliflower and cook til unfrozen. Add the garlic and ground beef. Cook, stirring frequently, until the meat is almost cooked through. Add the sauce and frozen peas.

3) Cook, stirring frequently, until the meat is completely cooked. Add the pasta and mix well.

Makes approximately 13 servings.

Feel free to make this recipe your own by adding different/more vegetables! I roasted 2 lbs of broccoli to go with this meal but it didn’t fit in the pot to mix it all together!
