Foodie Friday : Easy Veggie Salad
Sometimes the run club has potluck dinners. I rarely manage to plan ahead for these events, and so my go-to has become raiding my frozen vegetable stash in the freezer and whipping up some sort of cold veggie salad. (I’ve become known as “the one who brings the healthy side dish” so now I feel like I have to live up to that and always bring veggies 😂)
This week’s veggie concoction was carrots, cauliflower, peas, and radishes in a mustard-sesame-soy sauce. Hopefully people like it…if not, hubs and I will be eating for the rest of the week!
Easy Veggie Salad
The Veggies
5 small carrots, chopped into discs
5 radishes, chopped
12 oz frozen cauliflower
12 oz frozen peas
The Dressing
1 tbsp dijon mustard
1 tsp sesame oil
1 tsp soy sauce
garlic powder to taste
(Stir frequently throughout the cooking process!) Sauté the carrots in bacon grease (or the oil of your choice). When the carrots begin to brown, add the cauliflower. When the cauliflower is soft (at this point, break the bigger chunks into bite-sized pieces), add the peas. When the peas are cooked add the radishes. Turn off the heat and continue stirring. Add the mustard, sesame oil, soy sauce, and garlic. Stir well and let cool. (Or eat it hot!)
